Almond-Coffee Milk
with Chocolate Butter CookieS
This delicious dessert recipe breaks down into three separate components. When added together the result is a smooth, creamy and absolutely delicious. You’ll find recipes for the three separate elements below, and how to combine them here.
Blend almond milk with some cracked ice and 1/2 teaspoon almond extract until slushy and white. Pour into a mug or glass until 2/3rds full. Ladle some Zabaglione on top of the almond milk. Place a dusted cookie across the rim of the glass to garnish.
Almond Milk
1 ½ cups almonds, toasted
4 cups water
1 ½ cups granulated sugar
2 tablespoons orange zest, grated
Grind almonds with half the sugar to a fine powder. Bring water, sugar, orange zest and almonds to a boil, stirring to dissolve. Remove from heat and allow to steep overnight, covered. The next day, discard half the solids and set aside.
Chocolate Butter Cookie
1 ¾ cups All Purpose flour, sifted
1/3 cups cocoa powder, sifted
12 Tablespoons unsalted butter, very soft
7 Tablespoons granulated sugar
3 Tablespoons powdered sugar, sifted
3 large egg yolks, room temp.
½ vanilla bean, scraped
Sift together flour and cocoa powder. Set aside.
Cream together butter, sugars and vanilla seeds until fluffy (approximately 5 minutes). Add yolks, one at a time, until batter is smooth. Scrape down sides of bowl. Add sifted dry ingredients and mix on low speed until just combined. Transfer dough to a piping bag fitted with a 3/4″ open star tip.
Pipe zigzag shapes onto parchment-lined sheet trays 1” apart from one another. Bake at 350 degrees Fahrenheit for 10 minutes, rotating halfway, until lightly golden on bottom and sides just beginning to firm up. Cool completely on rack. Dust with powdered sugar.
Coffee Zabaglione
5 large egg yolks
¼ cup brewed espresso, hot
¼ cup granulated sugar
1 tablespoon almond oil
Whisk yolks, espresso and sugar over double boiler until thick. Strain through a sieve into a mixing bowl. Whisk on high speed until very thick & cool. Lower speed and slowly drizzle in almond oil.
