CHILI CHOCOLATE SORBET

Ingredients

6 cups water

4 cups sugar

3 cups cocoa powder

1 tsp salt

6-8 guajillo chili peppers (dried) broken into pieces

1# 4 oz bittersweet chocolate

2 tsp vanilla extract

5.5 oz Taza chili chocolate

3 cups water

Instructions

Combine 6 cups water, sugar, cocoa powder, salt and dried chili peppers.  BTB while whisking.  Steep 40 minutes.

Reheat and add chocolate. Stir until melted.  Stir in the vanilla and 3 cups water.

Transfer the mixture to a blender.  Process briefly.  Strain.  Chill.  Whisk the mixture with an immersions blender before freezing to thin the mixture out.
